Well how much commitment do you want to take in picking up, or getting into, the new setting? Maybe you should just go for a LN series that was good enough to get adapted to an anime, like Oregairu or Konosuba or something.
Short enough you can get through the whole canon in a reasonable time, popular enough that there's an audience for fanfic on the boards even if there isn't a community for fanfic specific to it, you know, and probably good enough for you to be excited about?
Or maybe spread out... I feel like the series you listed are kinda part of a bubble? Something like ATLA is a bit outside it but good, or you could read some Sanderson books, or you could always go for straight-up scifi?
There's always fukkin' Harry Potter. Actually, I'd challenge the "anything superhero is shit" assertion -- if you don't like, you know, the genre conventions, than it can't be helped; but BnHA is solid.
