If a creature has First Strike it deals combat damage before the other creature, negating Deathtouch.
There's also indestructible creatures who cannot be destroyed and only Exiled or given negative toughness till they die.
Deathtouch is often low power creatures. 3's and 4 power

So death touch is the Kamakaze style gameplay. Get a monster you don't care about dying and use him to take out a few enemies in the turn or two it survives.
