Well, i do not really blame Varys for his mistake - he have valid reason to hate magic,and never meet persons who had power and do not use it for selfish reasons.
So,he belive that RWBY must be the same.

About dodging arrows - not impossible from bigger distance.Long ago i cosplayed as english archer/althought with very light longbows compare to real deal - we use 18-22kilo bows.
But - one of my friend for fun was catching arrows in air which we send at him.So,it is possible,at least with ligher bows.

Well, given how volatile Dust is - sneezing can set it off, as Ruby demonstrated on her arrival at Beacon - we might never know if it was a failed ritual or a simple accident.

I mean most author I've read making cry and beg or beat him or do something horrible to him before killing him(even in cannon his death is pretty horrible) so going out by explosion is comparably tame and quick
