Not only there wasn't a Shirou Emiya born in Fate Grand Order but the time not matches
In the timeline of Fate stay night there were 5 holy grail wars of Fuyuki, with the fourth being in wich Shirou's family dies during the fire of Fuyuki and he participating in the fifth, but in Fate Grand Order there was only 1 Holy grail war happening wich happened in what could be considered the time of the fifth. so no fourth grail war to act as his origin story and even if he stumbled into the fifth and survivved(wich would be extremely unlikely) he wouldn't still be Shirou Emita since he wasn't adopted by Kiritsugu

And for the time not matching, Fate stay night takes place in 2004 with Fate grand order starting in 2015, so for Shirou to be Ritsuka's grandpa he would need to be at least at his 70s for the start of FSN but even then it would be when Ritsuka's was 5 since he/she is 16 in FGO, the math doesn't lie

Let's not start with the fact that for Shirou to know Kazuma and Gilgamesh(while thinking fondly of him) he needs to be from the singularity in wich he meet them, who are points of time that needs to be corrected, and while the deaths of the people in the singularities can affect the main timeline they are made in a way that the correction make it so it changes the less possible to maintain a coherent timeline

But given the end of the first arc the other timeline would had became it's own timeline not related to the FGO one,

Not only there wasn't a Shirou Emiya born in Fate Grand Order but the time not matches
In the timeline of Fate stay night there were 5 holy grail wars of Fuyuki, with the fourth being in wich Shirou's family dies during the fire of Fuyuki and he participating in the fifth, but in Fate Grand Order there was only 1 Holy grail war happening wich happened in what could be considered the time of the fifth. so no fourth grail war to act as his origin story and even if he stumbled into the fifth and survivved(wich would be extremely unlikely) he wouldn't still be Shirou Emita since he wasn't adopted by Kiritsugu

And for the time not matching, Fate stay night takes place in 2004 with Fate grand order starting in 2015, so for Shirou to be Ritsuka's grandpa he would need to be at least at his 70s for the start of FSN but even then it would be when Ritsuka's was 5 since he/she is 16 in FGO, the math doesn't lie

Let's not start with the fact that for Shirou to know Kazuma and Gilgamesh(while thinking fondly of him) he needs to be from the singularity in wich he meet them, who are points of time that needs to be corrected, and while the deaths of the people in the singularities can affect the main timeline they are made in a way that the correction make it so it changes the less possible to maintain a coherent timeline

But given the end of the first arc the other timeline would had became it's own timeline not related to the FGO one,

It is in the myth but the myths and the Nasuverse can change, we don't have Cu chulain fighting in bodypaint after all or his spear making thorns come from your insides, as for how it works in the Nasuverse, the Fae made it so it only accepts Artoria(Or any version of her) as her wielder and to recieve her powers you need to have a connection to Artoria, when Shirou had Avalon his efficiency plummeted after the fire of Fuyuki because Saber's presence was what allowed it to work(Especially since it had a remaining of her mana) and it was only because he was Saber's master that it worked so well, when he got Saber stealed by Medea the power of the sheat stopped working too until Rin made a contract with Saber and then made a connection with Shirou making it work again

Also it is said in Fate Stay Nigh that their events happen in 2004 wich is also the year the VN got out in the first place, it was reinforced in Fate Grand Order in wich they said the singularity F happened in 2004, and in FGO they literally start with a speech about how humanity doesn't have a future after 2015

Also there's the fact that you need to study and learn how to make a Reality Marble, EMIYA Archer studied for decades to develop his own only mastering it during his time as Counter Guardian, it's not something innate unless you have some psychic ability that would speed up the process but those things are rare and the only one we know had that it's Satsuki from Tsukihime
