I was going for more sounds, and I accent my W with a dipthong making it "double-ew". Don't know why but because that's how I say things, Ruby got it too.FTFY
If you are sticking to words when you can, Are works, and Ew is not pronounced U (I have no idea how to write how it is pronounced, but it isn't the ending sound of saying W), and is a proclamation of disgust, so I doubt Ruby would use it to describe Weiss's character in their team name.

Edit: I found where the mishap came from. You are missing an 'e' to make it 'ewe.'

It was an interesting exercise for me as well. Happy wikipedia had a good phonetic library. Out of the four spellings, I think eue would be your best bet. There were Four spellings and four values, I believe they correlated (the other values I didn't add, because they were for different sounds utilizing 'u' or homonyms for that sound).
